"In the early 1900's, sacked wheat was handled at the elevators much like it is today. Upon arrival at the elevator, the wheat was unloaded (in sacks) at the loading dock and stored in the elevators. The farmer was given a receipt, much like the one used today, and he was charged a handling and storage fee. Of course , it wasn't nearly as costly as it is today. The wheat sacks were stored until being shipped to the flour mills. Early Baart and Turkey Red were popular milling wheats as they were high in protein. Not all of the wheat was left in the sacks. In the winter many of the sacks were emptied into the flat house and the sacks were used over. It took a lot of manpower to handle the grain in this way."
